When it comes to wedding cakes,
the only limitation is your
imagination

When it comes to wedding cakes couples are requesting the extremes this year, from simple, white and elegant cakes with immaculately set tiers adorned with just a few fresh or hand-made flowers to bold colored cakes decorated with stripes and polka-dots. The trends represent just about anything the brides-to-be can conjure up, according to Kim Morrison, owner of Cakes For Occasions in Spring Mills. “I recently made a cake decorated with cow spots and ropes strung around each tier for a wedding that was set on a farm,” she says.

More and more, couples are choosing whatever extravagances they want for their ultimate dessert. There is nothing too plain or too far-fetched. But while you’re choosing from all those elaborate ideas, it is important to remember that quality counts, as well. “The outside of the cake is beautiful, but it’s what is on the inside that counts,” Morrison says. She recommends that couples meet with a variety of bakers and caterers to discuss ideas and possibilities, and to look through their portfolios until they decide who and what is best for them.

Speaking of unusual and off-the-wall cakes, many recent weddings have featured miniature cakes in lieu of traditional wedding cakes. With this option, each guest is given his or her own mini two-tiered cake. These very elegant cakes are more expensive than the traditional wedding cake, but an interesting variation nonetheless. According to Ron Ben-Israel of Ron Ben-Israel Cakes in New York City, miniature cakes are works of art. “Decorating miniature wedding cakes can be compared to ships in glass bottles,” he says. “They are made using magnifying glasses and with extreme attention to detail.” The miniature cakes are perfect for couples that cannot decide on one flavor and style because they can be prepared in a variety of different ways.

Ben-Israel’s “edible works of art” can be seen on his Web site, weddingcakes.com. He will ship his cakes anywhere, but they do tend to be a bit pricey. If keeping it local is important to you, miniature cakes are also available at Cakes For Occasions, or you can check with your local bakery.
