Herwig’s Kaiserschmarren
Herwig’s Austrian Bistro  
Ingredients
5 oz. flour
3 egg yolks
1 dessert spoon of sugar
8 fl. oz. milk
1 1/2 oz. rum soaked raisins
2+ oz. butter
confectionary or granulated sugar
stewed fruit
Directions:
1. Work flour, salt, eggs, sugar and milk into a thin batter. Heat 1 oz. butter in a pan and pour in the batter until finger-deep. Sprinkle on raisins and cook until golden brown.
2. Add another 1 oz. butter to the pan, turn the omelette and cook until golden brown on that side as well. Take two forks, tear the omelette into little pieces and allow to become almost dry.
3. Serve on a plate with sugar over the top and with a side of stewed fruit.
