Dan Rallis’s Lamb Chops
The Diner  
Ingredients
lamb chops (3 per person)
marinade (recipe follows)
mint sauce (recipe follows)
Marinade
1 part soy
1 part white wine
1 part oil
4 cloves garlic (one part)
1/4 tsp. ginger (one part)
1/4 tsp. pepper (one part)
Blend well.
Mint Sauce
1/2 part brown sugar
1/2 part water
1 part cider vinegar
1 part apple jelly
1 part fresh, chopped mint
Combine the sugar, water and vinegar in a saucepan and cook over medium heat until reduced by one third. Add the apple jelly and mint.
Directions:
1. Marinade for 2 to 3 hours.
2. Grill over hot coals 2 to 3 minutes per side. Brush mint sauce on both sides.
