Dave Swisher’s Mussel Biére

Otto’s Pub and Brewery  
Serving size: 12 per person
Serves approx. four

Ingredients
3 lbs. mussels (from a reliable source)
1 cup chopped scallions
approx. 20 oz. Light German Style Lager (Otto’s Helles)
4 heaping Tbsp. herb butter (recipe follows)
salt and pepper, to taste
Herb Butter
1/2 lb. whole butter
2 shallots, minced
6 cloves fresh garlic, minced
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
Soften butter in microwave or on stovetop. Add remaining ingredients and mix well. If you have a food processor you may blend all of the ingredients and then add the softened butter.
Directions:
1. Place the lager, 3 Tbsp. herb butter, scallions and salt and pepper in a large pot and bring to a simmer. Add the mussels and steep until opened.
2. Add another heaping Tbsp. of herb butter and remove heat. Taste the broth and season with salt and pepper accordingly.
3. Take any leftover herb butter, spread it on a piece of French bread and lightly brown it in the oven. This is a good way to soak up the remaining beer broth.
